I followed the tradition and my first dish at the fair ground was the
andouille gumbo.
The first time I came to jazzfest, I was really impressed by this
version of gumbo and have it as my first dish every year. Last year, I
was actually disappointed. I had it several times in different days to
confirm, and something was definitely wrong.
This year, I'm happy to say it's back to what it used to be: amazing.
The heavy broth, with the andouille and the pheasant meat, mixed with
white rice makes it the perfect opening act of foodfest!
